Is it just me, or is it incredibly difficult to find a healthy snack? Whenever I feel a bit peckish, I usually spoon a generous amount of peanut butter to keep me going. But as I’m about to kickstart my health journey (again), I’m determined to boot harmful habits, like my bad snacking. One thing I now always have on hand are rice cakes because there are so many ways to enjoy them. As the weather’s been warming up Down Under, I’ve really enjoyed my rice cakes with this refreshing and classic trio: Avocado, Coriander and Lime. These three are a perfect combo because they’re opposite flavours that compliments one other. Zestful, citrusy and smooth. Together, it’s the perfect balance.
Now, not only is this combo a healthy snack, it contains one of my most beloved fruits: avocado. Honestly, I’d eat it night and day if: a) it wasn’t pricey; and b) I wasn’t so determined to stick to my weekly food shopping budget. But a girl’s gotta treat herself every now and again, and seeing as I smashed out 2 decent gym sessions this weekend and was under the weekly food shop budget (woo adult goals), today seemed like a great day for a healthy, yet lavishing edible celebration.
- 2 Rice Cakes (I prefer Sunrice Original Thick Rice Cakes because they’re not too flimsy)
- 1 avocado
- Bunch of coriander leaves
- 1/2 lime, squeezed
While I’ve got myself sorted for healthy lunches with my soups, I’m so excited to overcome my bad snacking habits by replacing them with healthier (and more delicious) alternatives.
